Biological Chemistry and Food Sciences

Introduction

Education and research aimed at elucidating the chemistry behind biological phenomena of organisms from microbes to higher plants and animals and the ecosystems of which they are a part, and the attributes and functions of food materials; analysis of biofunctions and biosphere substance circulation; development of food processing technologies; and elucidation of the health functions of biological resources and nutrition for disease prevention

Research Projects

  • Preparation of lipid-saccharide complex and development of its application (Food material substituting emulsifiers)
  • Clarification of mechanism for the plants to uptake the nutrients utilizing functions and metabolites in plants and symbiotic microorganisms, and its application to the society
  • Suppression mechanism of muscle atrophy by amino acids or food components in aging and diseases and its application for functional foods
